Eating Better on a Budget

In Spring of 2009 we launched Eating Better on a Budget, an free outreach program including in-store demos, nutrition and food handling classes with tips on stretching your food dollars sustainably, and a series of Basics Cooking Classes: Grains, Greens, Beans, and Grazers. These free classes in Co-op Room 309 will invigorate your curiosity and enjoyment of food. The schedule for these monthly classes is available online, in our newsletter, and in-store. Come expand your repertoire and confidence with us!

EBB Part One
The basics of sourcing and storing your groceries
: buying in bulk and in season to save, proper storage, and preparation of produce, oils, grains, beans, and meat. We’ll also look at stocking the pantry, crucial kitchen tools, and how to get the most out of your appliances. You’ll go home with ideas and information to support some shifts in your kitchen.

Cooking Basics: Beans
Ah beans: a simple tasty source of protein often overlooked for flashy, pricier options. We’ll get down to the basics on beans, offering cooking shortcuts and prep tips, versatile seasoning solutions from across the world, and ways to enjoy beans hot, cold, spicy, tangy, and even for dessert! We’ll make up a couple of recipes, and then sit together to enjoy tasting the wide world of beans.

EBB Hands On Cooking
Leftovers boring you? Only have $10 for dinners? Wishing you knew what to do with all the "staples" you have in your cupboard? Eating Better on Budget has the answers! Learn to create scrumptious meals that will make your stomach and wallet satisfied.  This class will teach you the tricks you need to eat well without sacrifice.

Cooking Basics: Grazers
Our animal protein options are wide and varied in this area, and in this class we’ll look at good local sources, proper prep refreshers, and ingenious ways of working with meat of many kinds. We’ll walk you through a few recipes and send you home with recipes for wild game and fish, as well as flavorful ideas to help you savor your favorite meats.

EBB Part Two
This class will cover a wide range of ways to feed your family while sparing your pocketbook. Topics include creating simple satisfying meals for all ages, menu planning, and making the most of leftovers. We’ll cover sautéing, simmering, roasting, and baking, and explore family-friendly topics: potluck show-stoppers, creative ways to hide the veggies, sweet snacks and school lunches, simple effective menu planning, and involving your kids in the kitchen. You will take home recipes and an informational booklet full of tips to help you get creative and resourceful in the kitchen.

Grains, Greens, Beans, and Grazers with Co-op Cooking Coordinator Jill Dodge. Jill will walk you through whole foods, from nutrition to presentation, offer you seasoned preparation tips, and ways to expand your repertoire of grains.
