Bounty of Bulk: Local Raw Kimchi

Are you craving organic and raw fermented foods? Try a scoop of bulk Firefly Kitchens Kimchi, now available on the Co-op’s Olive Bar (in the Deli grab-n-go case). Buying in bulk let’s you purchase the perfect amount and reduce food waste and packaging by bringing your own reusable container. Simply weigh the container on one of our scales (located in Bulk and Produce) and write the tare weight on your container.

Firefly’s Kimchi is an earthy, vegan blend of local vegetables, including: green cabbage, onions, ginger, garlic, onions and Korean red peppers, that are naturally fermented with sea salt. Based on classic Kimchi, this pickled salad is uniquely crunchy and intense. Its combination of ginger, garlic and spice achieves a well balanced spicy kick without a lingering burn. A simple scoop can add a burst of bright flavor to sandwiches, burgers, wraps, noodles, breakfast dishes, or salads.

Coming soon to the Olive Bar: Firefly Kitchen’s Emerald City Kraut, named after their vividly green home city of Seattle. Emerald City Kraut contains chlorophyll-rich kale and sea vegetables, as well as green cabbage, Celtic sea salt, coriander, dill, turmeric and red chili peppers. Also look for Firefly’s Yin Yang Carrot Pickles – a simple yet satisfying fermented blend of organic carrots, ginger and sea salt.
