Behind the Counter: Specialty Meats & Custom Cuts

Our Meat Department provides dozens of fresh, handcrafted cuts of meat and seafood every day. We offer so many things, in fact, that we don’t have space to display everything available. We have many items that aren’t in the meat case that customers can still request. Discover a host of additional items we have kept in a secret stash. Secret’s out! Specialty Meat Items

  • Beef: Oxtail, London Broil, Sirloin Tip Roast, Top Round Roast, Korean BBQ Short Ribs
  • Poultry: Pesto Boneless Chicken Breasts, Korean BBQ Boneless Chicken Thighs
  • Pork: Sweet Spicy Sambal Pork, Filipino Pork Tocino
  • Seafood: Crab Cakes, Garlic Prawns, Calamari, Ahi for Poke

About Our Meat Program

Support your local economy and food system and buy from the Co-op’s Meat & Seafood Department. We provide the best quality natural and organic meats, and wild-caught seafood. We source from ranchers, farmers, and fishers who are committed to humane and sustainable standards. Our meats come only from humanely treated, vegetarian-fed livestock raised without the use of growth hormones or antibiotics. No artificial preservatives, fillers, MSG, nitrates, or nitrites are ever used in our meat products. Learn more about our Buying Guidelines here.

In late 2016 the Co-op expanded our Meat Department to include CURED, just through the Co-op parking lot at our C-SQUARE building. There our staff utilize old world methods like grinding and casing sausage; smoking meats; providing new takes on seasonal, fresh flavors; and bringing various aspects of the culinary experience together. In expanding the Co-op’s award-winning handmade sausage program to a full-scale charcuterie, we now provide a variety of house-smoked meats and wild-caught seafood.
