Cheese Whisperer: Dreamy & Creamy for New Year’s Eve
Burrata: imagine a “super” mozzarella, hand folded and filled with cream for a luscious texture. This delicious mozzarella is a specialty of the Apulia region of Italy, known for its agriculture and livestock. Burrata, literally means “buttery” in Italian, and it is a delight. Serve with a salad or crusty garlic bread toasts, crisped proscuitto ham, basil pesto and tomatoes for an elegant appetizer. Pair with joyous sparkling wine, a Cava, Prosecco or genuine Champagne will all do nicely!
Le Delice de Bourgogne: a decadent triple cream brie with a strong flavored, bloomy white rind. Crafted in the Burgundy region of France, this velvet cheese is a contrast of texture and taste. An inspiration for famous French gastronome Brillat Savarin, Delice’s sweet buttery interior will melt-in-your mouth with a slight cultured tang on the finish. The soft powdery rind of the Delice has a strong, mushroom-like flavor.
Enjoy this cheese at its height when spread on a thin cracker, with a dollop of raspberry jam and a sprinkle of freshly ground pepper for a sweet-spicy kick! Pour a glass of bubbly or Riesling wine or sparkling Lambic Belgian fruit beer to compliment the Delice’s tart creaminess. Then close your eyes, take a breath, and enjoy the precious last moments of 2011! Happy New Year!
