The Cheese Whisperer – It's Beemster Time!
It’s that time of year again, time for exquisite cheese made from pristine springtime milk. Beemster Graskaas, literally “Grass cheese”, is a seasonal Dutch cheese available in the Co-op’s Cheese Island. Taste the unique flavor of the milk from heirloom cattle grazing on the mineral rich pastures of North Holland.
Using Beemster cheese in your kitchen is ridiculously easy. Enjoy it on rustic bread for breakfast, on salads and soups for lunch or on pasta or a cheese board for dinner and dessert. Its supple, rich flavor pairs nicely with fresh fruit, pickled onions and fresh, bright green Castelveltrano olives, available from the Co-op Olive Bar. Beemster also sings when toss with wilted chard, rice or noodles. Or melt it into your favorite casserole or pasta sauce. Get adventurous and try a slice it with cherry, apple or pear pie!
