10+ Brilliant Bok Choy Recipes

With tender leaves and crunchy stems, bok choy is a mild veggie that can offer so much to your dinner plate: it absorbs whatever flavor you add it to, cooks quickly, stores well, and is especially delicious in the summer when it’s grown locally in Skagit Valley! Whether you go for a standard bok choy or the adorably tender baby bok choy, read on to discover some of our favorite ways to enjoy this veggies, from stir fries and soups to side dishes and salads.

Baby Bok Choy in Black Bean Sauce

When you see those cute baby bok choy at the co-op, do you know what to do with them? This is an easy introduction to these crisp little gems!

Ingredients

  • 2 tablespoons black bean sauce (available at Asian markets if not at the co-op)

  • 1 tablespoon dark sesame oil

  • 2 teaspoons sugar

  • 2 tablespoons chicken or vegetable stock

  • 6 small baby bok choy

  • 1 large red Fresno or jalapeño pepper (optional)

  • 1 tablespoon canola oil

  • 2 cloves garlic

Directions

  1. Stir the black bean sauce, sesame oil, sugar and stock in a small bowl and reserve.

  2. Trim the bases of the bok choy, then cut the bok choy in half vertically, then cut each half in half. Slice the Fresno or jalapeño pepper.

  3. Place a wok or large saute pan over medium-high heat and after a minute, drizzle in the canola oil. Add the bok choy and stir for two-three minutes to sear, then add the peppers and garlic. Stir for a few seconds.

  4. Stir the reserved black bean mixture, then pour over the contents of the pan. Toss until coated and sizzling. Serve immediately.

Easy Peasy Wonton Soup with Bok Choy

When you’re wanting warming soup that isn’t overly heavy or creamy, this wonton soup is the way to go. Plus, it’ll be ready in less than 20 minutes! Works wonderfully for weeknights – and do toss in some Co-op shredded chicken for extra protein, if you wont to.

Ingredients

  • 10-12 frozen wontons (or Loaban dumplings)

  • 1 bok choy, chopped – leafy green and stalk separated

  • 1 shallot, thinly sliced

  • 1-inch knob of ginger, minced

  • 3 green onions, thinly sliced

  • Pantry ingredients: olive oil, 32oz container of chicken/veggie broth, soy sauce (or coconut aminos), sesame oil, rice vinegar, minced garlic

Directions

  1. Add a Tbsp olive oil to a pot and sauté the shallot, ginger, and 2 Tbsp minced garlic.

  2. Once fragrant, add chicken stock, 2 Tbsp soy sauce, ½ Tbsp sesame oil, 1 tsp rice vinegar, and bring to a boil.

  3. Once boiling, add frozen wontons. Once wontons float to the top, toss in bok choy stalks and simmer for 2 minutes.

  4. Distribute chopped bok choy leaves between two bowls. Pour soup over the bok choy, top with green onions and chili crisp, if desired. Enjoy!
